Banana Turon

Banana turon, or turon ng saging, is a popular Filipino snack and dessert. It features ripe bananas wrapped in a lumpia wrapper, caramelized with sugar, and fried until golden and crispy. Often made with saba bananas—a starchy, slightly sweet variety—it’s a delightful balance of crunch and gooey sweetness. Some versions include a strip of jackfruit (langka) for added flavor.

If you’ve never tried making banana turon, you’re in for a treat. This easy-to-make recipe will bring the taste of the Philippines to your home.

Ingredients

To make 8–10 pieces of turon, you’ll need:

  • 4–5 ripe saba bananas (or plantains), sliced lengthwise into halves or quarters
  • ½ cup brown sugar
  • 1 cup ripe jackfruit strips (optional)
  • 10 lumpia wrappers
  • Water or egg wash (to seal the wrappers)
  • Oil for frying

Instructions

Step 1: Prepare the Bananas

Peel the saba bananas and slice them lengthwise into thin pieces. Each banana should yield 2–4 slices depending on size.

Step 2: Coat with Sugar

Place the brown sugar on a plate or shallow bowl.

Roll each banana slice in the sugar, ensuring it’s evenly coated.

Step 3: Assemble the Turon

Lay a lumpia wrapper flat on a clean surface.

Place one piece of sugared banana near the bottom of the wrapper. Add a strip of jackfruit on top if using.

Fold the bottom edge of the wrapper over the banana, tuck in the sides, and roll it tightly toward the top. Seal the edge with water or egg wash.

Repeat until all the bananas are wrapped.

Step 4: Fry the Turon

Heat oil in a deep frying pan over medium heat. Make sure there’s enough oil to submerge the turon halfway.

Fry the turon in batches, seam side down first, until the wrappers turn golden brown and crispy (about 3–5 minutes per side).

Sprinkle a little brown sugar into the hot oil while frying to create a caramelized glaze on the wrappers.

Remove the cooked turon and drain on a plate lined with paper towels.

Tips for Perfect Turon

  • Use ripe saba bananas: The sweeter and softer the bananas, the better the flavor.
  • Caramelize carefully: Adding sugar to the oil enhances the glaze, but stir frequently to prevent it from burning.
  • Don’t overcrowd the pan: Fry in small batches to maintain even cooking.
  • Add variety: You can sprinkle cinnamon or drizzle chocolate syrup for an extra twist.

Serving Suggestions

  • Banana turon is best served warm when the wrapper is at its crispiest. Pair it with:
  • Vanilla ice cream: The cool, creamy texture contrasts perfectly with the warm, crunchy turon.
  • Caramel sauce: For an extra indulgent treat, drizzle caramel over the turon.
  • Afternoon tea or coffee: Turon makes a perfect snack with a cup of hot coffee or tea.
