Low-Carb White Chocolate Cranberry Chaffle

Ingredients

Chaffles

  • 1 cup Shredded Mozzarella Cheese
  • 2 large Eggs
  • 1/4 cup Almond Flour
  • 1 tsp Vanilla
  • 3 tbsp Swerve Confectioner's Sugar Substitute
  • 1/4 cup Keto White Chocolate Chips
  • 1/4 cup Unsweetened Dried Cranberries

Cranberry Topping

  • 1 cup Fresh Cranberries
  • 2 tbsp Water
  • 1/4 cup Sugar-Free Maple Syrup

Instructions

  1. Preheat a mini waffle maker.
  2. Whisk together all of the chaffle ingredients in a mixing bowl.
  3. Place a bit of the batter onto the preheated mini waffle maker, and cook it until done to your liking (usually 3-5 minutes).
  4. Repeat step 3 until you have used all of your batter.
  5. While the chaffles are cooking, add the fresh cranberries and water to a pot over medium heat on the stove. Simmer until the berries soften and begin to burst open.
  6. Mash the berries lightly.
  7. Remove from the heat and stir in the maple syrup.
  8. Serve the chaffles with the cranberry maple syrup on top.
