Low-Carb White Chocolate Cranberry Chaffle

Ingredients
Chaffles
- 1 cup Shredded Mozzarella Cheese
- 2 large Eggs
- 1/4 cup Almond Flour
- 1 tsp Vanilla
- 3 tbsp Swerve Confectioner's Sugar Substitute
- 1/4 cup Keto White Chocolate Chips
- 1/4 cup Unsweetened Dried Cranberries
Cranberry Topping
- 1 cup Fresh Cranberries
- 2 tbsp Water
- 1/4 cup Sugar-Free Maple Syrup
Instructions
- Preheat a mini waffle maker.
- Whisk together all of the chaffle ingredients in a mixing bowl.
- Place a bit of the batter onto the preheated mini waffle maker, and cook it until done to your liking (usually 3-5 minutes).
- Repeat step 3 until you have used all of your batter.
- While the chaffles are cooking, add the fresh cranberries and water to a pot over medium heat on the stove. Simmer until the berries soften and begin to burst open.
- Mash the berries lightly.
- Remove from the heat and stir in the maple syrup.
- Serve the chaffles with the cranberry maple syrup on top.
