Easy Baked Pancake Muffins

 Pancake muffins are a delightful twist on traditional pancakes—a fun and portable way to enjoy a breakfast classic! Combining the grab-and-go convenience of muffins with the fluffy, flavorful goodness of pancakes, they’re perfect for busy mornings or weekend treats. Most Sundays, I whip up a couple of tins of these baked pancake muffins (with a little help from my trusty kitchen crew, of course!).  

Here’s where the magic happens: the mix-ins! This is your chance to get creative. Think juicy blueberries, sweet strawberries, rich chocolate chips, or savory options like crispy bacon, sausage, and cheese. Feeling adventurous? Try cinnamon sugar, crunchy nuts, or chewy raisins. The possibilities are endless—mix, match, and make these pancake muffins uniquely yours!



Ingredients

  • ▢2 cups pancake mix
  • ▢2/3 cup milk
  • ▢2 eggs
  • ▢1/2 cup maple syrup
  • ▢optional mix-ins

Instructions

  1. Preheat oven to 350° Next, mix together pancake mix, milk, eggs and 1/2 cup of maple syrup.
  2. Either spray muffin tin with nonstick spray or use muffin liners. Fill 2/3 of the way full. If you are using the mix-ins, do so now. About 1/2 to 1 TB of a mix in works great.
  3. Bake for 14-15 minutes or until a toothpick, inserted, comes out clean.
