Crustless Quiche

Ever stare into your fridge, wondering what to do with those odd leftovers? Enter the perfect recipe to rescue your forgotten ingredients and turn them into something magical! This dish is a flexible, flavor-packed solution for leftover ham, sausage, veggies, or whatever you’ve got that pairs beautifully with eggs.

Why This Recipe Works:

Unlike traditional quiches where cheese and toppings sit on the bottom, here, the magic happens right inside the egg mixture. By folding your cheese and mix-ins directly into the eggs, you avoid that sticky, scorched bottom layer. The result? A light, evenly flavored bake that’s as easy to clean up as it is to eat.

Ingredients

  • 6 eggs
  • 1 cup milk not fat free. Milk substitute can be used, like almond or soy
  • 1/2 cup grated cheddar cheese or your cheese of choice
  • 1 cup ham, bacon, sausage or veggie or a combination of all
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • Toppings such as salsa or sour cream as desired

Instructions

  1. Preheat oven to 350 degrees.  Spray a 9" pie plate with non-stick spray
  2. Add eggs into medium size bowl.  Beat eggs.  Add milk and combine.
  3. Add cheese, meat and veggies to egg mixture.  Pour into prepared pie plate.
  4. Bake for 25 minutes or until center is firm and edges are brown.
