Easy Baked Shrimp Toast

In my take on this classic, the recipe keeps it simple yet irresistible. You’ll need just a few key ingredients: shrimp, garlic, scallions, black pepper, mayonnaise, butter, and, of course, bread. The baguette slices are generously coated with the shrimp mixture, then fried or baked to perfection until they’re crispy on the outside and tender on the inside.  


For a finishing touch, I love adding fresh basil. Its delicate sweetness and aromatic flair pair beautifully with the savory shrimp topping, creating a dish that’s as vibrant as it is delicious. Ingredients

  • 6 oz shrimp, peeled and deveined (I use raw shrimps)
  • 3 tablespoons 
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons grated garlic
  • 1 1/2 tablespoons thinly sliced scallions (about 2 stalks of scallions)
  • baguette or ciabatta (see notes)
  • basil, thinly sliced

Instructions

  1. Preheat oven to 400F.
  2. Chop shrimps or process in a food chopper into small pieces. Don't process into a paste. Mix shrimp with mayonnaise, melted butter, grated garlic, scallions and a generous amount of black pepper.
  3. Ingredients for baked shrimp toast 
  4. Slice ciabatta or baguette in half horizontally, or cut baguette into thin slices. Each slice/half should not be thicker than 1 inch.
  5. Spread the shrimp mixture on the cut side of the bread. Place into the oven and bake for 15-18 minutes or until the top is golden and bread is crispy.
  6. Shrimp toast before baking 
  7. Remove bread from the oven. Sprinkle fresh basil and serve immediately.
